I really enjoy WIAW posts from other bloggers, so I figured I’d join in on the fun, especially since I’ve done a pretty good job taking pictures of my eats lately! And who’s going to be mad about 2 food related posts in a row?
WIAW is hosted by Peas and Crayons and it always leaves me with good ideas for new meals.
So without further ado…here’s what I ate on Monday:
Breakfast – leftover mushroom risotto with a fried egg. Such a good idea (thanks to the hubs for this idea!)
Snack – I picked up a box of Peanut Butter Cheerios – it was not a mistake. These babies are so yummy.
Lunch – Turkey and pepperoni sandwich with havarti cheese and avocado. And a side of white cheddar popcorn.
Snack – Granny smith apple with Reese’s Spread.
Dinner – My friend’s white lasagna/pasta dish with a roll and a side salad.
and I had to post a picture of last nights dinner too – Mahi Mahi with cajun seasoning (we use Emeril’s Essence), pearl couscous with italian cheese and a little lemon juice, and brussels sprouts (roasted in olive oil, salt, and pepper, then tossed in a balsamic vinegar/honey/olive oil blend – VERY good..little sweet, little tangy…so yummy)
Maybe I’ll start taking more time for pictures of food so they are prettier but these will have to do for now 😉

Who thinks we are going to get more snow tonight?? Looks like they’re calling for a few inches…we’ll see what happens. I don’t know about you, but I’m ready for SPRING!
