I forgot how time flies by when you have a newborn. And in this case, I just mean the day. Holy cow! I feel like I wake up, take care of Henry, and then it’s all of a sudden lunchtime. And then it’s time for bed. Just like that.
That being said, the days of coming up with dinners on the fly are behind us, at least for a little while. So are those of going to the grocery store multiple times a week…it’s just not feasible right now. That’s where meal planning comes into play!
On Sunday, we went through our fridge and freezer and came up with dinner ideas for each night of the week. Considering the toddler and the infant, going out isn’t much of an option just yet, so we have to come up with 7 different meals, but luckily we are fairly creative with our food. Here’s what we came up with for this week:
Sunday was Pork Fried Rice. We already had the rice left over from Saturday’s dinner (Chicken Tikka Masala…YUM) and had frozen pork chops and veggies in the fridge, so this one didn’t require anything we didn’t already have, SCORE!
Monday, some wonderfully sweet friends of ours brought over a white pasta/lasagna dish with sausage, salad, and dinner rolls. It was SO GOOD. And so nice to not have to do anything other than heat it up in the oven. So easy and so much appreciated! And there are leftovers for lunches. So awesome.

Tonight – Fish (mahi mahi) with Brussels Sprouts and Couscous.
Wednesday – Bratwurst with Red Cabbage
Thursday – Taco Thursday
Friday – Burgers with parsnip fries and salad
Saturday – Chicken (grilled or baked) with roasted broccoli and risotto
Given that entire menu, all we need to get at the grocery store is the red cabbage, stuff for the tacos (minus the ground beef/turkey), and parsnips. Everything else we already have.
Of course, the grocery list is a bit longer to incorporate breakfast and lunch stuff, but it makes me happy to know we are using up everything we buy at the store in good, healthy meals.
I’ll report back on how well we do, but I have a feeling this will work out well for us.
