I am always looking for new, healthy ways to get some snacking in, as well as some yummy, good for you ingredients. I found this recipe for No Bake Energy Bites by Gimme Some Oven and put my own spin on it for a nutritious, quick, and delicious snack! It’s super easy, fast, and seriously, these are so good.
1 and 1/4 cup (dry) oatmeal (I used old-fashioned oats)
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup chocolate chips (I used Nestle dark chocolate chips)
1/3 cup honey
1 Tbsp. chia seeds (optional)
1 Tbsp. unsweetened cocoa powder
1 tsp. vanilla extract
1/2 tsp pumpkin pie spice (or cinnamon)
Combine all ingredients together in a bowl, and stir together until everything is mixed up really well. I put wax paper in a 8×10 pyrex and spread out the ‘batter’ in the bottom as evenly as I could (or you could do what GSO does and roll them into balls), then pop them into the freezer for at least 10 minutes.
All the yummy goodness in there….
After about 10 minutes in the freezer, take the bars out and use a sharp knife to cut them into as many bars as you like. I did mine as squares but you can do this however you’d like.
