Clean Eating Challenge and weekend happenings

I hope everyone had a lovely weekend and Happy Mother's Day to all you mamas out there - mamas of humans, fur babies, shoot, even sometimes husbands (I know, right?).  Happy day to all of you!

First things first - on Sunday, I started a 2 week clean eating cleanse.  It can be found here. BuzzFeed Clean Eating Challenge.  

It probably wasn't my best idea starting this on Sunday, especially being that it was mothers day, but oh well, there will be more :)  So I'll give you a rundown of what I've had so far.

Day 1 breakfast was a Kale and Banana smoothie.  This was good. It would be better if our blender blended better. Nothing like chunks of kale to get you going in the morning.  It was still tasty but we just need a better blender.

Day 1 - Lunch - Okay now look. I know that the lunch doesn't sound good - Shaved Asparagus Salad with Shallots and Fried Eggs - but SERIOUSLY. This was AWESOME.  Maybe I had low expectations, but my mind was blown with this. It was so good.  Of course my bowl did not look like theirs (not quite as pretty) but seriously, a phenomenal dish that we will be having again (probably with chicken and bacon next time...)

Day 1 snack was carrot sticks and hummus.  Here's our outside set up while Brooke was napping - of course there is no booze allowed on the challenge but I'm okay with that. I added a cut up strawberry to my water on Sunday and it was super tasty!

Day 1 dinner was Roast Chicken (we grilled it instead) Bowl with Quinoa and Kale.  Much like lunch, the flavors in this bowl really were amazing. I was really surprised at how much I liked this dish and I guarantee we will make this again as well.

Day 1 snack after dinner was a cut up pear with two teaspoons of almond butter. It was as good as you'd expect it to be :)

Day 2 breakfast was Overnight Oats with Blueberries.

So far, I'm not impressed with the breakfasts. This was not my favorite. I don't know if it's the greek yogurt (which tastes like sour cream to me) or what, but I was not digging it.

Day 2 - Lunch - Lunch was SO GOOD - AGAIN - Kale, Chickpea, and Fennel Salad with Orange Viniagrette.  It used leftovers from Day 1 Dinner, plus a few other ingredients, and holy wow - really awesome.  Plus it had fennel, and I thought I'd hate that because licorice - but not at all! SO GOOD. (note that all the viniagrettes are homemade too from fresh ingredients).

Day 2 snack was Sliced Tomatoes with Feta and Basil - as good as you would expect. I usually like my caprese salads to have mozzarella but the feta was a new variety and I liked it!

Day 2 dinner was Napa Cabbage Wraps with Chicken, Tomatoes, Mango, and Avocado.  Again I had low expectations for this since this is similar to the chicken tacos we've made before - but of course, they were really, really tasty.

Day 2 snack was 2 clementines but I only had one because ours seem to be going bad and they were pretty squishy and gross...

I'm on day 3 today so I'll follow up tomorrow with today's eats. So far so good!

On to what most of you are here for - Brooke!

She's a stinker.  She loves getting ready for bed because it means clothes off time and she LOVES it. She'll scurry away laughing with just her diaper on and roll around on the couch (we're close by to catch her if she gets too close to the edge).

We played outside a bunch this weekend since it was so nice.

I think someone will have a green thumb like her daddy. She already loves playing in the dirt as much as he does.
