Nothing too exciting here today. I’ve come down with a cold of some nasty sort (hit me yesterday like a ton of bricks) and I’m just trying to pull through 🙂
For my breakfast bake, I used:
6 sausage patties (chopped up)
1 Bell pepper
~2 cups of shredded cheddar cheese
1 Sweet potato (shredded – used the mandolin for this part)
3/4 C Milk
I cooked the sausage first, then the onion and green pepper (next time I’ll add mushrooms and tomatoes). Then I mixed the eggs, 1/2 the cheese, and milk together in a separate bowl. I sprayed the pan with Pam, put the shredded sweet potatoes on the bottom, sprinkled the sausage around, then added the egg mixture. I baked at 350 for about 35 minutes, then topped with the rest of the cheese and baked for another 4-5 minutes or so.
It’s definitely tasty! I might go lighter on the sweet potatoes next time and add more sausage, but for a first try, it is pretty darn good! This made enough for Robert and I both to have a slice on Sunday, and there are still 6 slices left.

I didn’t do any exercise this weekend, other than painting on Sunday (our living room this time). I felt terrible on Saturday (achy, sore, etc) and a little better yesterday but over the day I got stuffier and stuffier and now I’m still pretty miserable. I’m hoping, though, to get a ride in tonight since it is supposed to SNOW tomorrow!
